This vegetarian quesadilla is delicious and packed with nutrients and protein! The combination of sweet potato, peppers, onions, great northern white beans, cheese and spices create the perfect flavor. And it is a dinner or lunch that can come together very easily!
If you’re gluten free and enjoyed flour tortillas prior, you probably felt stuck at first when it comes to finding tortillas that were gluten free, healthy and big enough to hold ingredients for a quesadilla or burrito. Or, even if you’re not gluten free, you may notice that the flour tortilla packages have a lot of ingredients in them. I am still trying to find or make a flour tortilla that is healthy, gluten-free, less costly and tasty. In the meantime, I found LaTortilla Factory Cauliflower Tortillas and they have little ingredients in them (which are all healthy), and are big enough to create a packed quesadilla! I am still continuing to search and make tortillas to find the perfect fit, but LaTortilla is a great start! Let’s make this quesadilla!
Instructions to Create this Vegetarian Quesadilla
With the oven preheating to 425 degrees F, dice the sweet potato into 1/2 inch thick pieces, place onto a baking sheet in 1 layer, coat with 1.5 tbsp oil, 1/2 tsp garlic powder, 1/2 tsp basil, and 1 tsp Mrs. Dash tableblend and bake for ~15 minutes, or until soft
Chop the red and green pepper and onion and on a separate baking sheet, top with remaining olive oil and spices and add onto a separate baking sheet and bake for ~10-15 minutes, or until soft
In a separate bowl, mash the beans until there are little to no beans left whole
On the stove in a frying pan on medium heat, place a tortilla flat in the pan and on 1/2 of the tortilla place the beans on the bottom, then fill with sweet potato, pepper and onion mixture, and top with cheese. Fold over other half of the tortilla and let cook until the tortilla is browned. Flip, brown other side and serve!
Tips
- Add cheese on the top and bottom if you don’t want the contents of the quesadilla to fall out!
- I used LaTortilla factory cauliflower tortillas as they had less ingredients in them
