I have been eating this gluten free coffee cake all week… who wouldn’t though with a cinnamon swirl layer and a cinnamon sugar topping! It is the perfect treat for any time of the day. Let’s make it!
Instructions for Gluten Free Coffee Cake
Preheat the oven to 350, and grease a 9×13 pan. Combine the flour, brown sugar, cinnamon and softened butter into a bowl and stir until fully combined and crumbly
In a separate bowl, combine the sugar, flour, and cinnamon
In a bowl, mix the flour, sugar, baking powder, baking soda, and salt. Add in the softened butter and beat on low until combined. Add in the milk, vanilla, egg and beat until combined. Pour half of the mixture into the pan, spreading it out evenly among the pan, pour the cinnamon sugar on top.
Pour the remaining batter on top. Smooth it once again and then add the crumble on top. Bake ~55 minutes.
Notes
- The batter is a thicker consistency, if you want to make it less thick, simply add in additional milk

1/2 cup almond flour
2 eggs
3/4 tsp baking powder
1/2 tsp baking soda

4 tbsp of unsalted butter, softened

1 cup brown sugar
1 cup Gluten Free All Purpose Flour
2 tsp cinnamon
1/2 cup unsalted butter, softened
- For the streusel layer:
1/4 cup sugar
1 tbsp flour
1/2 tsp cinnamon
