This easy loaded vegetable bake is just what the title says- loaded with vegetables and so simple! All you have to do is dice up the vegetables, add oil and spices onto them, bake and enjoy!
How to Make Easy Loaded Vegetable Bake
Preheat oven to 425 degrees F. Dice up the potatoes, asparagus, broccoli, cauliflower, kale, red pepper into small pieces. Lay out onto baking sheets in a single layer.
Add oil and spices and place in oven. Bake for 20 minutes or until potatoes are soft when poked. Top with Parmesan cheese, Cholula if you like a little kick, or keep it as is!
Tips:
- This vegetable bake can be made with any vegetables you have in the fridge that need to be used.
- Za’atar spice is a fantastic spice for these vegetables! You can find them at your local grocery store
- Use foil or parchment paper to help the vegetables not stick.

1 cup kale, chopped
2 russet potatoes
1 cup asparagus, chopped into quarters
1 cup frozen broccoli/cauliflower mix
1 red pepper, diced
2 tbsp olive oil
1 tbsp Za’atar seasoning
1/2 tsp red pepper flakes
1 tsp garlic powder
Directions
- Preheat oven to 425 degrees F
- Chop up vegetables and place on baking sheet
- Sprinkle oil and spices on top. Bake for 20 minutes or until the potatoes are soft when you poke a fork into them.
- Top with any desired toppings and serve hot!
