I noticed that I was struggling finding a good quality and also cheaper granola in the store that didn’t contain gluten, so I decided to create this and I was thrilled with how good it tasted! I love pecans and almonds in granola as they add that good nut flavor to any yogurt or cereal. Have an allergy? Don’t worry, add in your favorite dried fruit instead!
How to make Almond and Pecan Granola
- Preheat the oven to 290 degrees and in a large bowl combine the oats, almonds, and pecans together
- In a smaller bowl, combine honey, vegetable oil, vanilla extract, and whisked egg white together
- Combine wet and dry ingredients and stir until oats are evenly coated
- Place onto baking sheet, lined with parchment paper, and spread evenly across
- Bake for 50-55 minutes or until granola is golden
Tips
- Let the granola completely cool before breaking it into chunks, or else it will not stay together in clumps!
- Use parchment paper underneath to ensure granola not sticking to the bottom, if you don’t have it very lightly oil the pan prior to laying the granola in it.
- Enjoy with yogurt, milk or by itself!
