Struggling to find a gluten-free enchilada sauce at the store? This gluten-free enchilada sauce recipe is the answer and is easy and tasty while being the perfect addition for many Mexican dishes such as the Vegetarian Mexican Rice Bowl.
For a while I avoided dishes that required enchilada sauce because I could not find a gluten-free enchilada sauce, so I decided to create my own to allow me to expand my recipes. This sauce was the great addition to making my Mexican recipes perfect!
Instructions:
- Measure out and combine spices into a small bowl and set aside. It is important to have these ready as the recipe comes together quickly.
- In a medium-sized pot over medium heat, heat the oil and once it’s ready, pour in the flour and spice mixture slowly and whisk constantly. Cook for ~30 seconds. Then, whisk the tomato paste into the mixture (it will get clumpy), and slowly pour in the broth while whisking constantly until smooth.
- Raise heat to medium-high and bring the mixture to a simmer, then reduce heat as necessary to maintain a gentle simmer. Cook, whisking often, for about 3 minutes, until the sauce has thickened a bit.
