It’s that time of the year for holiday sweets! With loads of chocolate and a hint of peppermint, these gluten-free chocolate peppermint cookies are a perfect family recipe to make to include everyone!
How to Make Gluten Free Chocolate Peppermint Cookies
- Preheat oven to 350 degrees F and line a baking sheet with parchment paper
- In a large mixing bowl, add butter and sugar and use an electric mixer on low until combined and creamy. Add the egg in and beat until just combined.
- Add in flour mixtures, cocoa, baking soda and salt and beat on a low speed until soft cookie dough forms
- Add in chocolate chunks and stir or mix briefly. Scoop out cookie dough into roughly 2 tablespoons per cookie, roll into a ball, and place onto baking sheet (this will make your hands sticky!). Next, press fork into middle of cookies until slightly flattened
- Bake cookies 12-14 minutes or until minimal amount is left on toothpick.
- For peppermint glaze: combine milk, powdered sugar, and peppermint extract together and stir until combined
- Let cool completely then drizzle peppermint glaze on top.
Looking to Make These Cookies Not Gluten Free?
- To make these not gluten free, add in 1 1/4 cup all purpose flour instead of using almond flour and GF all purpose flour. It’s that simple!
Tips:
- If you only have gluten-free all purpose flour, you can use that if you do not have almond flour on hand, it might just have a slightly less thicker consistency.
