This grilled cheese is SO cheesy, tasty, and just happens to be vegetarian. Just 3 simple ingredients to create the perfect grilled cheese- mushrooms, spinach and of course, cheese! Let’s make it!
Instructions to make the Grilled Cheese
Chop mushrooms and baby spinach into small pieces and slice Swiss cheese. In a small fry pan, add 1 tbsp oil to pan over medium high heat. Place mushrooms and cook for ~1 minute. Add in baby spinach, stir and remove from heat once spinach is wilted (~30 seconds-1 minute)
Remove vegetables from the pan and set aside. Butter 1 side of the each slice of bread (the butter sides will be on the outside). Place one slice of bread, butter side down on the pan, and place 4 slices of Swiss cheese. Next, spread the mushroom mixture (~1/2 the mixture) onto the cheese. Top with remaining 4 slices of cheese and add the last slice of bread on top.
On medium (may need to turn to a medium low after initially getting the pan warm to get the cheese fully melted) brown each side of the bread, turning once (~3 minutes a side). Serve hot!
Tips:
- Use baby spinach if you don’t want a stronger spinach flavor. Baby spinach is less bitter but contains the same nutritious benefits!
- I like to use brick cheese to make thicker slices, but any sliced cheese would work too.
